Salsa, Ole!

In honor of Cinco de Mayo, we’re sharing two salsa recipes that we love! (Does anyone else sometimes eat chips and salsa as a meal? Please tell us we’re not the only ones!) There’s no denying the tastiness of this snack, and we’ve found that these recipes are much better than the stuff from a jar.

Fresh Mango-Avocado Salsa

1 mango, diced

1 red bell pepper, diced

¾ cup chopped red onion

1 tbsp sugar

2 tbsp white wine vinegar

1 avocado, diced

1 tsp. salt

4 tsp. lime juice

Mix all ingredients together in a bowl, except the avocado. Gently stir in avocado right before you’re ready to serve.

Fresh Tomato Salsa

2 cups fresh, diced tomato

¼ of a large yellow onion, diced

3-4 cloves minced garlic

3 tsp. lime juice

3 tbsp. fresh cilantro

½ tsp. salt

6 tbsp. canned, sliced green chiles

Pulse all ingredients in a food processor until desired consistency is reached.

Both of these salsas are not only great with tortilla chips, but they would be amazing on top of chicken tacos or a quesadilla!

Try out these quick and easy recipes this weekend and let us know what you think!
