Our lovely photographer, Bree, brought these frozen treats into the office last week and they were the perfect, refreshing popsicles for summer. She was sweet enough to share the family recipe with us, and now we want to share with you!
Make a simple syrup using ½ cup sugar, ¼ cup water, and lemon zest. Heat all ingredients on medium and bring to a simmer, and stir until all the sugar dissolves.
Combine with ¾ cup lemon juice (3-4 medium lemons) and 1 cup water. Pour into a popsicle form and freeze. Enjoy!
*Note: use as little or as much pulp and lemon zest as you wish to change the popsicles consistency and to add more or less texture.
